Foreword, Pots, & Warning

I put here some recipes for some quick pasta dishes seasoned with quick sauces.pasta - at least before Italy's entry into the new currency, with the transition from the old LIRA to the new Euro. Now - 2023 - with the unfortunate event of the War in Ukraine things have worsened, and the price of pasta in Italy, almost doubled for the first time due to the unfair exchange rate of the new currency, has again almost doubled during the war in Ukraine, due to the increased price of energy. (Click to see why). Compared to before the currency change, the price per kilo has quadrupled.
Despite everything, given the high caloric content, if you limit yourself to eating a normal amount of pasta the cost per person is more than acceptable.

about 8-9" in diameter and the same height, and a smaller saucepan for making the sauce. IF YOU WANT TO FINISH BY MIXING THE SAUCE BETTER WITH THE PASTA, TO MAKE SAUCE YOU MUST USE A FRYING PAN THAT CAN CONTAIN YOUR PASTA AFTER

IMPORTANT:

  1. before using any ingredient make sure you are not allergic to the ingredient itself.
  2. Before inviting friends to dinner to show how good you are at cooking, try making this dish yourself at least 2 times.
  3. Especially when you use garlic, make sure that your partner or all your friends you did invite will eat pasta too. Don't kiss anyone who hasn't eaten it with you.
  4. Here the given doses are for 2 people. Increase everything in direct proportion if there are more guests.

Pasta with onion bacon and tomato puree
(for 2 persons)

  • Calories approximately 670 to 800 Kcal per person
  • Total preparation time approximately 45'

Ingredients : here is an example of how to prepare a good dish of tasty pasta for 2 which requires little more than cooking time to prepare it:

  Spaghetti or Maccheroni 200 g  (one hundred grams each) 750 Kcal /  3135 Kj
  Olive Oil 30cc (1/3 of a glass) 270 Kcal /  305 Kj
  Onion    nº1 big fresh onion (400g finely chopped) 160 Kcal / 670 Kj
  Italian sweet Bacon 150 g not smoked chopped in small cubes 160 Kcal / 670 Kj
  COARSE SALT one full soup spoon  
  Fine grain salt a pinch of salt to the sauce  
  Unflavored Tomato puree 250 -350 cc (about half a bottle)  
 

 

 

The total calories of this preparation are approximately 1350 - 1600

Procedure:

  • POTS:you need a round pot for pasta about 8-9" in diameter and the same height, and a smaller saucepan for making the sauce
    Fill the pot a little more than half with water, and put it on the heat. ADD THE COARSE SALT AND PASTA (carefully) WHEN THE WATER BEGINS TO BOIL. In the meantime prepare the sauce as follow:
  • put the oil and the finely chopper onion into the saucepan and put it on heat (medium) and stir with a wooden spoon.

  • when the onion begins to take on a little colour, add the bacon and fry, stirring with a wooden spoon, until it takes mell and completed fried appearance.

      Tomato puree (passata)

  • add tomato puree into the sauce pan with a half glass of tap water and add a pinch of salt. Stir with a wooden spoon and bring to boil.

  • Bring the heat to lowest and let the sauce boil very slowly, a little bubble every now and then. Stir occasionally to prevent the sauce from sticking to the bottom.(This is the longest stage 25-30')
  • End of the sauce preparation.

When your pasta is cooked, drain it and COOL IT BRIEFLY UNDER CURRENR WATER, drain again and pour it into the bowl where you prepared the sauce and

MIX CAREFULLY UNTIL THE SEASONING IS DISTRIBUTED EVENLY.

Stirring 200grams of "PENNE RIGATE"

 

Prepare your 2 dishes, divide into approximately equal quantities, or as you prefer.

Pasta with oil garlic & tomato (FOR 2 PERSONS)

  • Calories approximately 500 to 550 Kcal per person
  • Total preparation time approximately 30'
  • Procedure (click)

Ingredients : here is an example of how to prepare a good dish of tasty pasta for 2 which requires little more than cooking time to prepare it:

  Spaghetti or Maccheroni 200 g  (one hundred grams each) 750 Kcal /  3135 Kj
  Olive Oil 30cc (1/3 of a glass) 270 Kcal /  305 Kj
  Garlic     nº 2 garlic cloves finely chopped DONT REMOVE THE CENTER
  Caper jar in vinegar 10-15 capers (facultative) squeeze to remove the liquid
  COARSE SALT one full soup spoon  
  Fine grain salt a LITTLE pinch of salt to the sauce  

 

 

The total calories of this preparation are approximately 1000

Procedure:


Fill the pot a little more than half with water, add the salt and put it on the heat. ADD THE COARSE SALT AND PASTA WHEN THE WATER BEGINS TO BOIL. Before that, or in the meantime, prepare the sauce as follow:

  • clean the garlic cloves and chop finely mixed with capers

  • Put oil and chopped garlic with capers into the frying pan and put it on heat (medium). Stir with a wooden spoon.

  • when the garlic begins to take medium colour (do not burn), or until you smell a cooked scent End of the sauce preparation.

When your pasta is cooked,

  • take a half-ladleful of cooking water

  • put it into the frying pan where you prepared the sauce and put the pan on the heat- medium

  • drain pasta a and pour it into the frying pan

  • MIX CAREFULLY UNTIL THE SEASONING IS DISTRIBUTED EVENLY and the water has all evaporated. Then you can serve it.

Prepare your 2 dishes and divide into approximately equal quantities, or as you prefer.


Stirring 200grams of "PENNE RIGATE"

If not tasty enough for you, you can add some dried chilli flakes !

Spaghetti Oil garlic and canned tuna fish

(for< 2 persons)

  • Calories approximately 670 to 800 Kcal per person
  • Total preparation time approximately 30'
  • Procedure (click)

Ingredients : here is an example of how to prepare a good dish of tasty pasta for 2 which requires little more than cooking time to prepare it:

  Spaghetti 200 g  (one hundred grams each) 750 Kcal /  3135 Kj
  Olive Oil 30cc (1/3 of a glass) 270 Kcal /  305 Kj
  Garlic     nº 2 garlic cloves finely chopped DONT REMOVE THE CENTER
  Caper jar in vinegar 10-15 capers squeeze to remove the liquid
  Canned tuna fish 80-100 g in olive oil 200 Kcal / 836 Kj
  COARSE SALT one full soup spoon  
  Fine grain salt a pinch of salt to the sauce if necessary

 

 

The total calories of this preparation are approximately 1300

Procedure:

  • POTS:you need a round pot for the pasta about 8-9" in diameter and the same height, and a smaller saucepan for making the sauce. IF YOU WANT TO FINISH BY MIXING THE SAUCE BETTER WITH THE PASTA, TO MAKE SAUCE YOU MUST USE A FRYING PAN THAT CAN CONTAIN YOUR PASTA AFTER COOKING

  • End of the sauce preparation.

When your pasta is cooked,

  • take a ladleful of cooking water

  • put it into the frying pan where you prepared the sauce and put the pan on the heat- medium

  • MIX CAREFULLY UNTIL THE SEASONING IS DISTRIBUTED EVENLY and the water has all evaporated. Then you can serve it.

Prepare your 2 dishes and divide into approximately equal quantities, or as you prefer.

If not tasty enough for you, you can add some dried chilli flakes !

Awful Spaghettis with crude Oil & garlic and a passata's cast

(for 2 persons)

For this terrible preparation intended for strong palates, who love garlic, you need a special tool to extract the scent of basil and garlic intimately embraced. It is a stone or wooden mortar in which the ingredients are mixed by crushing them until a kind of paste is obtained

Materials

Here are shown 200 grams spaghetti, a half garlic head, a branch of basil leaves, anda stone mortar with its own pestle A bottle of virgin olive oil at right side

  • Calories approximately 500 to 600 Kcal per person
  • Total preparation time approximately 30'

(spaghetti have been cooked more than 20 minutes to get greater volume)

 

Ingredients : here is an example of how to prepare a good dish of awfully tasty pasta for 2 which requires little more than cooking time to prepare it:

  Spaghetti 200 g  (one hundred grams each) 750 Kcal /  3135 Kj
  Olive Oil 30cc (1/3 of a glass) 270 Kcal /  305 Kj
  Garlic     nº 5 garlic cloves chopped DONT REMOVE THE CENTER
  COARSE SALT one full soup spoon  
  Fine grain salt a pinch of salt to the sauce if necessary

You could add and pound together with the rest also about ten grams of pine nuts or even walnuts obviously deprived of the shell. It would be interesting to see how it comes with peanuts.
I doubt though that the taste of peanuts goes good along with the rest.

 

 

The total calories of this preparation are approximately 1000, excluding nuts or pine nuts.

Procedure:

  • POTS:you need a round pot for the pasta about 8-9" in diameter and the same height, and a smaller saucepan for making the sauce.

    Fill the pot a little more than half with water, add the salt and put it on the heat. ADD THE COARSE SALT AND PASTA WHEN THE WATER BEGINS TO BOIL. Before that, or in the meantime, prepare the sauce as follow:
  • clean the garlic cloves and chop roughly, and get the basil leaves salt and oil into the mortar

  • Work with the pestle until you obtain something like that in figure

           

  • End of the sauce preparation.

When your pasta is cooked,

  • drain pasta and put it into a container. Pour pour your salsa on it

  • MIX CAREFULLY UNTIL THE SEASONING IS DISTRIBUTED EVENLY. If necessary add a little cooking water and mix to amalgamate.

  • Prepare your 2 dishes and divide into approximately equal quantities, or as you prefer.

  • When you do serve it put a splash of fresh passata on each

  • Good Luck !


About 120 grams of Terrible spaghetti with a passata splash

If not terrible enough for you, you can add some dried chilli flakes !
